I've read a lot about a boom in demand for 'micro greens', locally produced salad items.
Just wondering if you think this is an area that really is growing and if you see a future for smallscale producers selling locally, to restaurants, cafes, organic shops, fresh produce markets or privately online.
As someone who clearly knows their pulses from their grains, what's your opinion?
I do try to keep my finger on the pulse - and grain 😀. Small scale producers need some form of regulation. How would they be certified organic - quite an expensive test regime there? Back to your question Enrico, it seems to be a growing sector, micro-greens and sprouting seeds are extremely nutritious and generally very healthy indeed.
